The Olivares Brothers
Alvaro and Benny Olivares, originally from Puebla, bring their passion for traditional Mexican street food to New York City. Alvaro came up with the original birria recipe, while Benny perfected it operationally to ensure that the quality is always there. They both came to the US to live the American dream, starting their cooking journey at a very young age under the guidance of their mother. Since arriving in the US, they have loved being part of the restaurant industry. Birria de Res is now one of the top birria spots in New York City for delivery.

Where The Recipes Come From
Our birria recipes are inspired by the traditional flavors of Jalisco, where birria originated. Alvaro learned the authentic birria recipe from seasoned Mexican chefs in New York City.
Combining these techniques with the rich culinary heritage of Puebla, Alvaro and Benny crafted a unique blend that brings the vibrant flavors of both regions to every dish at La Birria de Res.
